Also known as Earthnut, Tuberous Sweetpea is a perennial legume growing to 4′ tall and produces small sweet tubers that tast similar to sweet potato or chestnut. The plants are drought resistant and very hardy to the point of being invasive in some areas since they spread by the creeping roots. I find that it’s easy to keep contained and under control by mowing around a bed of it. The edible tubers can be dug anytime from fall through spring.
